The 2015 vintage was mild and dry, producing outstanding wines across the board, with great aromatics, natural acid and elegant structure. These are wines that will age magnificently for many years to come
Chardonnay was hand-picked in small lots over a number of weeks, then whole bunch pressed direct to barrel and allowed to ferment naturally in French oak barriques (20% new). Partial malolactic fermentation was encouraged to build more generous and complex structure, and lees stirring for freshness and a creamy, curd texture. Total barrel maturation time was twelve months.
Trademark grapefruit and citronella aromas are fore with background notes of oatmeal, roasted nuts and struck match. It has a soft, textural palate with spicy oak and fine, natural acidity. A polished and elegant style of Chardonnay with flinty, leesy elements lending complexity.
